I'm surprised that Giles/Angel isn't more of a "thing". Somewhere in the world I am sure there's a website filled with G/A fic of the two of them screwing each other senseless, but I haven't come across it.
G/A isn't my particular cuppa either, but I do have some relatively unpopular/unusual ships that I like where my demand for stories far outstrips the supply on AO3. I've found new-to-me stuff from relatively inaccessible (compared to AO3) sources:
1) Someone's personal archive that somehow managed to survive the Geocities purge of fanfic websites. Some of these actually archive more than just the author's work.
2) The UCSL (Unconventional Shippers List)
3) Riposte (archive for any fic involving Giles and/or Wesley) or Of Demons and Destiny (Giles fic)
[2) and 3) are organized by author, and are not always great about indicating which ship, if any, is involved in the summary, so I feel for the hypothetical Giles/Angel shipper who's looking for that stuff, because there is a lot of Giles/Anybody-But-Angel for them to flip through to find their tiny little ship]
4) Yahoogroups mailing lists--all the ones I've run across appear to be dead now, but the archives have old fic. Searching is painful and slow and there's a lot of terrible stuff to filter through (which is true for all sources, to be honest).
5) Usenet archives (Also a painful search process. But I do occasionally find something that is available nowhere else.)
6) Individual authors' livejournals. Works best for people who left livejournal about the time when they left fandom.
Most of these sources skew towards older fic, but I'm guessing G/A was more popular when they were both on the same show. So I'm guessing there's a fair amount that could be found by the motivated searcher (i.e. not me or you.)
